Then why can't Windows 2000 and XP install on a new intel based iMac.

WinNT 5.0 = Win2k WinNT 5.1 = WinXP WinNT 5.2 = Win2003 and WinXP x64 WinNT 6 = WinVista

afaik only WinXP x64-edition support EFI (maybe Win2k3 too) [and WinVista]
