So it seems build-related.

But then again, these are the exact same tool versions I'm using (the .iso I
provided was built on Linux too). I'll have to think a bit about how to move
on from here. If anyone else has a brilliant idea (actually, let's drop the
brilliant, any idea would be fine) please feel free to jump in.
